Easy Single Serve Handheld Lasagna
Made in a muffin tin, this Easy Single Serve Handheld Lasagna has all the traditional lasagna layers but, this lasagna you can eat with your hands!
With the boys having both Friday and Monday off, we decided to take full advantage and sneak away for a quick vacation. We headed to Arizona to soak up some sun and some warmth. The only problem? There wasn’t a whole lot of warmth there (but we still made the most of it)!
A Quick little vacation
Every time we go on vacation, we like to sneak in as much fun as we can. Not a whole lot of sitting around for this crew! When we were in Arizona, it was a REALLY cold stretch in Minnesota (-20 with the windchill).
The temperature may have only been 50 degrees outside, but that didn’t stop these Minnesota kids from jumping in the pool! Although, full transparency, they were the only ones in the pool 🙂
This was the third time we’ve stayed at the Westin Kierland Scottsdale (second time with the kids) and we’ve already booked our fourth trip – the kids absolutely love it! They have a huge pool, a lazy river, a mini “Field of Dreams”, nightly s’mores, basketball & pickleball courts, and daily poolside games. I mean, what more could you want?!

Let’s talk muffin tins
With this recipe, I HIGHLY recommend that you purchase this muffin tin. It is the muffin tin that I use on a daily basis but it works amazingly well for this recipe. It has a solid metal frame and the rest is made out of silicone, making it extremely easy to pop the Handheld Lasagna out once it’s done cooking.
Why handheld lasagna?
Lasagna is great, there isn’t a whole lot than can be improved. But, if you are wanting to serve it as an appetizer, or eat it on the go, then this is the recipe for you!
It’s also a fun way to get kids to try something new. Anytime my kids can eat something without utensils, they are always instantly more curious about what I’m serving.
In addition, I have one kid who doesn’t like sauce. In anything. So with this Easy Single Serve Handheld Lasagna, I can easily accommodate him (without having to make a whole other meal). I just make sure to leave the sauce out of at least three for him and then everybody is happy!
This Easy Single Serve Handheld Lasagna still has all the deliciously cheesy layers of lasagna, but they are all neatly contained in single serve portions. Substituting wonton wrappers for noodles, this Handheld Lasagna is neatly layered in a muffin tin. It is then baked (and crisped) to perfection and is all perfectly contained in a cute single serve portion.

Easy Single Serve Handheld Lasagna
Equipment
Ingredients
- 1 tbsp olive oil
- 3 garlic cloves, minced
- ¼ cup onion, diced
- ½ lb ground Italian sausage
- 1 cup ricotta cheese
- 1 egg
- 1 tsp salt
- ½ tsp pepper
- 24 wonton wrappers
- 23.5 ounces pasta sauce
- 8 ounces shredded Italian blend cheese
Instructions
- Preheat the oven to 375°F. Spray a 12 cup muffin tin with olive oil spray.
- Over medium heat, add olive oil to a pan. Add garlic, onion and sausage and cook until the sausage is no longer pink.1 tbsp olive oil, 3 garlic cloves, minced, ¼ cup onion, diced, ½ lb ground Italian sausage
- In a separate bowl, crack the egg and whisk in the ricotta cheese. Season with salt and pepper.1 cup ricotta cheese, 1 egg, 1 tsp salt, ½ tsp pepper
- Line each muffin tin with one wonton wrapper (make sure that you push it all the way down).24 wonton wrappers
- On top of the wonton wrapper, layer the following: pasta sauce, sausage-onion-garlic mixture, ricotta and egg mixture, followed by shredded Italian cheese.23.5 ounces pasta sauce, 8 ounces shredded Italian blend cheese
- Put another wonton wrapper on top and push it down. Repeat the layers from above.
- Bake for 15-18 minutes, or until the cheese is melted and the sides are slightly browned.
- Dip the lasagna in warm pasta sauce.
