I’m not sure what took me so long but I FINALLY got an Instant Pot! And let me tell you, this thing is glorious. I don’t think I realized all the things it could do – their is an option to sauté things before you pressure cook them.
So, you can get a nice sear on meat to seal in the juices or you can sauté some vegetables before you add the cooking liquid. It seriously is great – expect more Instant Pot Recipes coming your way!!

It is getting cold here. Let’s be honest, not a big surprise (I’ve lived in MN my whole life after all), but it still just seems so dang cold this time of year. It’s like Mother Nature lulled us into this false sense of security with an amazing MN summer and then WHAM! that cold air of late October hits your face and you feel like you never want to set foot outside again.
The really sad part about this is that the temperature was 33 degrees when I was feeling this way. Pretty sure I’m going to turn into a straight up icicle when it gets below zero this winter.
This is precisely why I knew that I needed to come up with a tasty, hearty soup that warms you up on a cold night. Chicken Noodle Soup is my favorite; it feels so homey. My Mom would always cook it in the winter time, letting the whole chicken sit in the pot all day, filling the house with delicious smells.
Well, with this recipe, you can get the appearance of cooking all day but, in reality, you just chucked some stuff (some really good stuff) in an Instant Pot, pressured cooked it for 10 minutes, and out comes a savory broth with perfectly shreddable chicken. - carrots
- celery
- white onion
- garlic
- chicken broth
- bay leaves
- fresh thyme
- Knorr chicken bouillon powder
- salt & pepper
- boneless skinless chicken breast
- wide egg noodles
- lemon

Halloween is right around the corner and the forecast calls for snow (noooooooo). So, I will be making this Chicken Noodle Soup that night for dinner to keep every body full and warm before we head out trick-or-treating. The boys are so excited for Halloween!

Tips for involving kids
- Let your kids help you cut up the vegetables with their own knives.
- Have them help you put all of the ingredients into the Instant Pot.

- There is always going to be a mess when you cook with your kids but, like my little guy Will says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
Easy Instant Pot Chicken Noodle Soup (with chicken breasts)
Equipment
Ingredients
- 2 cups carrots peeled & sliced (about 4 large carrots)
- 1 cup celery sliced (about 3 celery stalks)
- ¾ cup white onion diced (about 1/2 onion)
- 6 garlic cloves minced
- 8 cups chicken stock/broth
- 3 bay leaves
- 4 stalks fresh thyme
- 4 tsp Knorr chicken bouillon powder
- salt & pepper to taste
- 3 lbs boneless skinless chicken breast
- 10 oz wide egg noodles
- juice from 1/2 a lemon
- fresh parsley chopped (for serving)
Instructions
- Add carrots, celery, onion, garlic, chicken stock, bay leaves, thyme, chicken bouillon and salt & pepper to the Instant Pot and mix.2 cups carrots, 1 cup celery, ¾ cup white onion, 6 garlic cloves, 8 cups chicken stock/broth, 3 bay leaves, 4 stalks fresh thyme, 4 tsp Knorr chicken bouillon powder, salt & pepper
- Add chicken to the Instant Pot.3 lbs boneless skinless chicken breast
- Push the “High Pressure” button on the Instant Pot and set the timer for 10 minutes. Put the lid on and turn the valve to the “sealing” position.
- After the soup has cooked for 10 minutes, let the pressure release naturally for at least 10 minutes and then manually release any remaining pressure.
- Remove the chicken and shred.
- Push the “Sauté” button on the Instant Pot and set the timer for 5 minutes. Add the noodles to the soup and let them cook.10 oz wide egg noodles
- Once the noodles are cooked, add the shredded chicken back to the pot.
- Squeeze in the lemon juice and add the parsley. Enjoy!juice from 1/2 a lemon, fresh parsley
